Spicy Butterbean Burgers

A simple vegetarian dish
Ingredients:
4 oz cooked/canned butterbeans , well drained
1 tablespoon porridge oats
2 tablespoons carrot, grated
1 egg, beaten (you may not need alll of it)
1/4 onion, finely chopped
1/2 clove garlic, crushed
1 tablespoon fresh coriander , chopped
1 tsp (hot) curry powder
1 tsp olive oil
1 salt and pepper
Directions:
1. EITHER... mash the butterbeans together with a fork and add the other dry ingredients
2. OR.... Place the dry ingredients in a food processor and pulse briefly until the mix resembles dry breadcrumbs
3. Add enough beaten egg to bind the mixture, stir well and set aside for 30 mins to 1 hour
4. Form the mixture into 2 patties. Heat the olive oil in a non-stick frying pan and cook the patties for 4 or 5 minutes on each side.
5. Serve with some light mayonnaise, mango chutney and a green salad.
