I threw this together to go with mikekey's recipe for Chili-Lime Baked Turkey and we really enjoyed it. Use the measures specified on the rice package for preparing the rice, just add the other ingredients in. No additional liquid is required. Ingredients:
1 cup lundberg brown basmati rice (or your favorite brand) |
2 cups water, as required by package directions (or vegetable or chicken broth) |
1 tablespoon dried onion flakes |
1/4 cup julienne carrot |
1/4 cup diced celery |
1/4 cup diced red bell pepper |
1 teaspoon season salt (i use sea salt seasoning, #282645) |
1/2 teaspoon dried jalapeno pepper |
1/2 teaspoon cumin |
Directions:
1. In a medium saucepan, bring water or broth to boil over high heat. 2. Meanwhile, place rice in a fine strainer or colander and rinse well; drain. 3. Add all ingredients to saucepan, including the rice, and prepare per the package directions. |
