Spicy Broccoli, Prawn Orzo Salad |

My DD's love orzo and this has always been one of their favorites. You can serve this dish without the prawns Ingredients:
2 1/2 cups broccoli florets, steamed |
8 ounces orzo pasta, cooked |
2 large tomatoes, seeded and chopped |
3 tablespoons parsley, chopped |
1 tablespoon olive oil |
1 tablespoon red wine vinegar |
1 teaspoon salt |
1 teaspoon pepper |
1 teaspoon garlic powder |
8 ounces prawns, cooked |
Directions:
1. Cut the broccoli into florets and steam in the microwave for about 1-1/2 - 2 minutes. 2. Cook the orzo pasta according to directions. Drain. 3. In a large bowl, combine all the ingredients and toss. Chill for 2 - 24 hours. Just before serving, adjust the seasonings if dry. Add a bit more olive oil and red wine vinegar. |
