If you're bored with plain old broccoli, this dish will sort you out! It's got piles of peppers and tomatoes, so it's a great way to get some of your 5-a-day, and there's also loads of chillies, herbs and spices to make sure your taste buds will be tingling. Spices vary according to indiviual tastes. Ingredients:
18 ounces broccoli |
2 onions, chopped |
2 red peppers, chopped |
2 green peppers, chopped |
2 yellow peppers, chopped |
5 tomatoes, chopped |
4 fenugreek leaves |
1 green chili pepper, chopped |
1 tablespoon cilantro, chopped |
1/2-1 tablespoon red chili powder |
1 teaspoon ground turmeric |
1 -2 tablespoon ground cumin |
1 -2 tablespoon ground coriander |
7 tablespoons oil |
2 ounces sugar |
salt |
Directions:
1. Blanch chopped broccoli in boiling water with salt and sugar. 2. Saute the onions in a pan with oil. 3. Add the peppers, ground spices, green chili and broccoli and saute for 5 mins until all the ingredients are blended together. 4. Remove from the heat and add the tomatoes. Salt to taste and garnish with cilantro. |
