Another favorite quick & easy dinner. Ingredients:
2 cups cooked brown rice |
1/2 bell pepper, chopped |
1/2 teaspoon oregano |
1/2 teaspoon rosemary |
1/4 teaspoon salt |
1/8 teaspoon cayenne pepper |
1 medium onion, chopped |
1 garlic clove, minced |
1 (14 1/2 ounce) can diced tomatoes with juice |
1 cup tomato sauce |
1 (15 ounce) can black-eyed peas, rinsed and drained |
Directions:
1. Mix all ingredients together ina large skillet. 2. Bring to a boil, stirring frequently. 3. Cover, reduce heat, and simmer for 10 minutes or until heated through. 4. This is a versatile recipe. Feel free to use different seasonings or beans if these don't strike your fancy. |
