Yummy quick meal Ingredients:
1/2 cup onion, chopped |
4 minced garlic cloves |
2 tablespoons olive oil |
1 (15 ounce) can black beans, rinsed and drained |
1 (14 1/2 ounce) can mexican-style tomatoes |
1/4 teaspoon ground red pepper |
2 cups long grain rice |
Directions:
1. in a sauce pan cook 1/2 cup onion, garlic, and hot oil till tender but not brown. 2. stir in beans, undrained tomatoes, and ground red paper. 3. bring to boiling then reduce heat and simmer uncovered for 15 minutes. 4. mound rice on a plate make a well in each mound spoon mixture into well. |
