1/2 cup water |
1/4 to 1/2 teaspoon crushed red pepper |
1/8 teaspoon salt |
1/8 teaspoon black pepper |
1 (15-ounce) can black beans, undrained |
1 dried ancho chile (about 1 ounce), seeded |
1/2 teaspoon margarine or butter |
cooking spray |
2/3 cup chopped onion |
1 garlic clove, minced |
1/3 cup thinly sliced green onions |
Directions:
1. Combine the first 6 ingredients in a saucepan; bring to a boil. Reduce heat; simmer 15 minutes. Discard ancho. 2. Melt margarine in a nonstick skillet coated with cooking spray over medium-high heat. Add chopped onion and garlic; sauté 5 minutes or until onion begins to brown. Add onion mixture to bean mixture. Stir in green onions. |
