Ingredients:
1 medium onion, chopped |
4 cloves garlic, minced |
1/2 cup red wine or 1/2 cup stock or 1/2 cup water |
1 (28 ounce) can crushed tomatoes |
4 cups water or 4 cups stock |
1 green bell pepper, diced |
2 stalks celery, diced |
2 cups sliced okra |
2 teaspoons finely minced fresh ginger (don t omit ginger) |
1 teaspoon dried oregano |
1 teaspoon dried thyme |
1 teaspoon paprika |
1 teaspoon ground cumin |
1/4 teaspoon black pepper |
1/4 teaspoon cayenne pepper |
1 cup diced zucchini |
1 (15 ounce) can black beans, with liquid |
1 -2 tablespoon soy sauce |
4 cups cooked brown rice |
2 smoked sausage |
1 habanero pepper (optional) |
Directions:
1. Braise the onion and garlic in wine until onion is soft. 2. Add tomatoes, water, green pepper, celery, okra, ginger, and seasonings; simmer for 15 minutes. |
