Low in fat and low in calories, goes great with tortilla chips. You can use the baked chips or fat free chips if you really want to keep things low. Ingredients:
3 tomatoes, seeded and chopped |
1 (15 ounce) can black beans, rinsed and drained |
1 -3 jalapeno pepper, seeded and minced |
1/2 small sweet onion, chopped |
1/4 cup chopped cilantro |
1/2 teaspoon lime zest |
3 tablespoons fresh lime juice |
1/2 teaspoon salt |
1/2 teaspoon black pepper |
Directions:
1. Combine ingredients. 2. Chill several hours before serving. 3. Serve with tortilla chips, if desired. |
