Spicy Black Bean Corn And Jicama Salad |

This is a great salad to go along with any Tex-Mex style meal. The cilantro makes this salad very refreshing. Ingredients:
1 15 oz cans black beans |
1 15 oz can corn |
1 cup jicama, julienned |
2 plum tomatoes, seeded and chopped |
1 handful cilantro cleaned, dried, and chopped |
1 lime, juiced |
1/4 cup extra virgin olive oil or vegetable oil |
2 cloves garlic, chopped |
1 jalapeƱo, chopped |
1 teaspoon honey, sugar or splenda |
salt, black and/or red pepper to taste |
Directions:
1. Drain and clean the black beans and corn 2. Add jicama, tomatoes and cilantro 3. In a separate container, mix the remaining ingredients 4. Add dressing to salad and chill before serving. |
