A spicy, hearty chili that can be made with meat or simply go vegetarian Ingredients:
3 pounds black beans, dry |
2 quarts water |
1 1/2 cups onions, chopped |
1/2 cup green pepper, chopped plus 1/4 cup green pepper, chopped |
2 tablespoons chipotle chili powder |
1 tablespoon salt |
1 tablespoon black pepper |
4 cups chili sauce (heinz) |
1/4 cup red pepper, chopped |
1 cup tomatoes, diced |
3 tablespoons chili powder |
4 tablespoons cumin |
2 teaspoons lime juice |
1 bunch cilantro, chopped |
4 cups vegetable stock or use beef stock if adding meat |
2 pounds browned ground beef (optional) |
Directions:
1. Boil the black beans in water with onions, 1/2 cup green peppers, salt and pepper. 2. Add additional water if needed 3. Cook beans until slightly tender, about 1 hour. 4. Add the 1/4 cup green pepper and remaining ingredients, and ground beef (if using). 5. Simmer for about an hour. Add water or stock as necessary for consistency. |
