I made these up for supper tonight. These taste a little like my favorite black beans and rice. My husband even likes them! Ingredients:
1/4 small onion, diced |
1 small carrot, grated |
2 garlic cloves, minced |
jalapeno pepper (optional) |
1 (15 ounce) can black beans, drained |
1/4 cup saltine crumbs |
salt |
pepper |
cumin |
dried chipotle powder |
Directions:
1. Saute onion, carrot, and jalapenos in a little oil, until softened. Add garlic and saute until garlic is soft. 2. Add salt, pepper, cumin, and chipotle powder and cook another minute or two longer. 3. Combine vegetables and beans in a bowl, and mash with a fork. 4. Add cracker crumbs and mix thoroughly. 5. Form into 4 patties. 6. Coat the bottom of a large skillet with oil and heat over medium high heat. 7. Fry the patties until they are brown and a little crunchy. 8. I like these wrapped in tortillas, with a little lettuce and cheese on top. |
