Spicy Beef Pilaf

A delicious dinner for cold winter nights. This was derived from a New Zealand women's magazine.
Ingredients:
500 g premium minced beef
1 large onion
1/2 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon turmeric
1 1/2 cups rice (basmati)
3 cups chicken stock
1 cup frozen vegetables (thawed)
2 chopped tomatoes
1/2 cup currants
1/2 cup parsley (chopped)
Directions:
1. Brown mince in a little spray oil and drain.
2. Saute diced onion with the spices.
3. Add stock and bring to the boil.
4. Toss in rice.
5. Allow to simmer for a little while, until rice par-cooked.
6. Toss in mince and other ingrediants.
7. Simmer until rice is cooked and the kitchen smells aromatic and delicious.
8. Serve with a spponful of natural yoghurt.
