My kids and grandkids, love this recipe. Ingredients:
1 tsp. olive oil |
1 lb. beef sirloin tips |
1 cup onion, dice |
2 cups salsa |
1 cup corn, frozen or can |
1 tbsp. jalapeno pepper, minced |
1 tsp. chili powder |
1 clove garlic, minced |
10 oz. tortilla chips |
1 cup shredded cheddar cheese |
Directions:
1. Heat oil in a large skillet over med. heat. 2. Add beef and saute 3 minutes, add onions and continue to cook until beef is brown, stirring frequently, about 5 minutes, drain 3. Transfer beef mixture to slow cooker. 4. Add salsa, corn, jalapeno, chili powder and garlic, stir to combine. 5. Cover slow cooker, cook on low heat for 3 hours or until beef is tender and mixture is heated through. 6. Place tortilla chips on a large serving plate.Spoon beef mixture over tortilla chips, top with cheese and any topping of your choice. 7.
