Spicy Beef and Vegetables |

From Pillsbury's 30-Minute Meals, c. 2001. To save yourself prep time, purchase meat precut for stir-fries in your grocery store. Ingredients:
4 ounces uncooked vermicelli |
2 tablespoons soy sauce |
2 tablespoons hoisin sauce |
1 tablespoon honey |
1 teaspoon cornstarch |
1/2 teaspoon crushed red pepper flakes |
3/4 lb boneless beef top sirloin steak, cut into thin bite-sized strips |
1 medium onion, cut into thin wedges |
2 medium zucchini, cut into 2 x 1/4 x 1/4-inch strips |
1 small red bell pepper, cut into thin strips |
1 garlic clove, minced |
1 (14 ounce) can baby corn, drained and rinsed |
Directions:
1. Cook vermicelli to desired doneness as directed on package. Drain; cover to keep warm. 2. Meanwhile, in small bowl, combine all sauce ingredients; blend well. Set aside. 3. Spray large nonstick skillet or wok with cooking spray. Heat over medium-high heat until hot. Add beef and onion; cook and stir 3 to 5 minutes or until beef is no longer pink and onion is crisp-tender. |
