red bean and rolled oats Ingredients:
1 tbsp. soy sauce |
1 tbsp. ketchup |
1 cup onions |
4 cloves garlic |
1/2 cup carrot |
1 1/2 tsp. chili powder |
1 tsp. ground cumin |
3 cups kidney beans |
2 tbsp. dijon mustard |
1 1/2 cups rolled oats |
Directions:
1. cook kidney bean ahead of time (no added salt). 2. chop onions. 3. mince or press garlic. 4. peel and grate carrots. 5. saute onions and garlic for 5 minutes in a small of oil. 6. add carrots, chili powder and cumin, and cook on low heat for 5 minutes. 7. set aside. 8. mash beans. 9. add mustard, soy sauce, ketchup (or tomato paste) and the sauteed veggies. 10. mix in the oats. 11. form the mix into patties. 12. cook burgers in an non-stick pan for 5 to 8 minutes on each side. 13. serve on a bun with choice of condiments. 14. makes 6 to 8 servings. 15. calculation based on 8. |
