This is a great vegetarian option that kids wont mind Ingredients:
1 tablespoon olive oil |
1 onion, cut into wedges |
1 garlic clove, crushed |
1 teaspoon ground coriander |
2 tablespoons fresh coriander, chopped |
1 teaspoon ground cumin |
1 teaspoon chili, dried and crushed |
1 teaspoon sugar |
1 (400 g) can whole canned tomatoes |
1 chicken stock cubes or 1 vegetable stock cube |
2 (300 g) cans beans, drained |
60 g tortilla chips |
3/4 cup cheddar cheese, grated |
1/4 teaspoon salt and black pepper |
2 tablespoons sour cream |
Directions:
1. Heat oil in a frying pan. Fry onion for 5 minutes. Stir in garlic, ground and fresh coriander, cumin, chillies, sugar and tomatoes. Crumble in stock cube. 2. Stir in beans and simmer for 10 minutes. 3. Preheat grill to high. 4. Transfer mixture to an ovenproof dish. Scatter with tortilla chips and cheese. Season to taste with salt and pepper. 5. Grill until cheese melts. 6. Serve with sour cream. |
