Spicy Bean and Sausage Gumbo |

Another simple and flavorful meal... Ingredients:
1 tablespoon olive oil |
1/2 cup minced onion |
2 cups diced spicy sausage |
2 cups beef broth or 2 cups bouillon |
1 (15 ounce) can chili beans, with sauce |
3 cups cooked rice (i used leftover red rice) |
1/2 teaspoon cumin |
1 teaspoon cilantro |
fresh parsley |
Directions:
1. In a large sauce pan on medium heat, sauté onion in olive oil until translucent. 2. Add sausage and lightly brown. 3. Stir in broth, beans, rice, cumin, and cilantro. 4. Reduce heat and simmer for 30 minutes. 5. Place in a bowl and sprinkle with parsley. 6. ****To complete meal, I added basil-cheese rolls. |
