From Caribbean Choice's Trinidad and Tobago section. Ingredients:
1 large red snapper |
4 tablespoons butter or 4 tablespoons margarine |
2 cups chopped tomatoes |
1 cup white wine |
4 ounces matouk's green seasoning |
salt |
2 teaspoons matouk's west indian hot sauce |
Directions:
1. Melt butter and saute green seasoning. 2. Add chopped tomatoes, salt, hot sauce and wine. 3. Place fish in a greased baking dish and add sauce. 4. Bake at 350° for 40 minutes. Baste with sauce during cooking. |
