Spicy Asian Lettuce Cups

This is a flavorful and easy to make appetizer that can also transfer over as a side dish for an asian inspired meal.
Ingredients:
2 tbsp vegetable oil
1 medium onion, cut into medium dice
2 garlic cloves, minced
1 can (8 oz) sliced water chestnuts, drained, rinsed, and chopped medium fine.
1 ib ground pork, beef or turkey
1/4 cup soy sauce
1/4 cup ketchup
4 tsps rice wine vinegar
4 tsps seasame oil
2 tsps (or more to taste) hot red pepper flakes
2 tbsp light or dark brown sugar
1 head ice burg lettuce core removed, leaves separated and torn into approximately 4 in cups
1/4 cup sliced scallions
1/4 cup chopped peanuts
Directions:
1. Heat oil in large (12 in) skillet over med high heat.
2. Add onion, garlic and water chestnuts and saute until onion softens, 3 to 4 mins. Add ground meat and cook stirring frequently, until meat loses it' raw color and liquid has mostly evaporated, about 5 minutes; take care to break the meat into very fine crumble.
3. Meanwhile, mix soy sauce, ketchup, vinegar, oil, pepper flakes and sugar in small bowl. Add to pan and continue to cook until mixture has thickened to the consistency of thick sloppy joes. Remove from heat.
4. When ready to serve, reheat mixture if necessary. Lay out lettuce cups on serving tray. Fill each with 2 Tbsp filling, garnish with scallions and peanuts, and serve.
