Something substantial for breakfast, or as a side dish. Ingredients:
1 large or 2 medium potatoes |
1/3 of a large red onion chopped |
1 jalapeno pepper sliced into rings, then cut those in half |
mamma's best sweet & spicy barbeque sauce |
olive oil and butter for frying |
dollop sour cream |
Directions:
1. scrub potato and microwave for 2 minutes 2. in a medium frying pan add 1 tsp olive oil- when warm, add about 1 T butter 3. after microwaving potato, cube and saute in saucepan with olive oil/butter until brown 4. add jalapeno pepper rings, cook for a few minutes then add red onion 5. a clove of minced garlic is optional here 6. thin barbeque sauce with an equal amount of water- start with a scant 1/4 cup each and pour over potato mixture in pan- cook until warm 7. serve with a dollop of sour cream atop it to mix in when eating 8. cubed ham can also be added to make this a main dish 9. I think this could be multiplied and served in a large casserole dish with sour cream florets on top- sprinkle with cilantro, small diced tomatoes or bacon bits. |
