Spicey Corn Salad

This is a great addition to a summer barbecue.
Ingredients:
1/2 lime, juice of
1 small jalapeno, seeded and chopped
1 1/2 teaspoons honey
1/4 teaspoon cumin
1/4 cup olive oil, extra virgin
4 ears corn, shucked and cut off the cob
2 cucumbers, peeled in stripes, halved, seeded and sliced
1/2 onion, vidalia, thinly sliced
salt and pepper, to taste
Directions:
1. Put lime juice, jalapeno, honey and cumin in blender. Mix.
2. Add olive oil while blender is running making an emulsion.
3. Put corn, cucumbers and vidalia onions in bowl.
4. Add dressing. Season with salt and pepper. Toss.
