Yogurt drinks, known as lassi in India, Pakistan, Sri Lanka, and Bangladesh, are served in New York City's numerous Indian restaurants. Salty and sweet versions accompany spicy meals to cool the heat. Ingredients:
3 cardamom pods*, lightly crushed |
2 1/2 cups plain yogurt |
1/3 cup sugar |
1/4 teaspoon freshly grated nutmeg |
1/2 cup water |
garnish: freshly grated nutmeg; ground cardamom |
Directions:
1. Remove seeds from cardamom pods (discard pods) and transfer to a blender. Add yogurt, sugar, nutmeg, and water and blend until smooth. If drink is too thick, thin with water, 1 tablespoon at a time. Serve over ice in tall glasses. 2. *Available at Indian markets and Kalustyan's (800-352-3451). |
