This is a spinoff of Alton Browns waffle recipe. I don't use the whole wheat flour his calls for, since I don't have it on hand. I made these randomly the other day, and I just used ground cinnamon and cloves. I'm going to try them with allspice or nutmeg added whenever I decide to go restock. The waffles freeze very good, and taste way better than store bought ones. Ingredients:
2 cups all-purpose flour |
3 tablespoons brown sugar |
1 teaspoon ground cinnamon |
1/4-1/2 teaspoon ground cloves |
1 teaspoon kosher salt |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
3 eggs |
4 tablespoons butter, melted |
2 cups buttermilk, at room temperature |
Directions:
1. Whisk all dry ingredients together. 2. In a seperate bowl, whisk eggs and melted butter until completely combined, then whisk in buttermilk. 3. Pour wet ingredients on top of dry, and mix with a spoon or rubber spatula. Batter should be very lumpy. 4. Let batter stand for 5 minutes before filling. 5. Grease waffle iron, and enjoy. |
