Spiced Vidalia Onion Bake |

Something different to do with wonderful Vidalia onions, or Texas Sweets. Great dish to bake along with a meatloaf or a a plain roasted chicken, kind of like an onion dressing with a little spice and cheese. Just slide in the last 30 minutes of cooking your main entree. Read more . Easy. Ingredients:
8 cups of vidalia onions chopped |
1/2 stick of unsalted butter |
1/2 cup of self-rising flour (as all southern cooks have in the pantry) |
1 small can of diced green chilies |
1/2 tsp of salt |
1/2 tsp of black pepper |
1 generous cup of cheddar jack cheese, shredded |
3/4 cup of crushed cracker crumbs |
1/4 stick of sliced butter to mix in the topping |
1/4 cup of grated parmesan |
Directions:
1. Melt butter in large skillet. 2. Add onions and cook five to seven minutes to just wilt. 3. Mix onions, flour, jalapenos, salt and pepper and 3/4 cup of the cheddar jack cheese. 4. Put in casserole dish and top with remaining 1/4 cup of cheese. 5. Crush the crackers into crumbs (I've used saltines/goldfish/Ritz at different times and all have been a success) 6. Mix the cracker crumbs with cheese and 1/4 stick of butter, crumble with fingers and cover the top of the casserole. 7. Bake at 350 for 30 minutes. |
