I had a little less than 1 cup of stuffing in my pantry and I didn't really want to just eat it plain. So, I threw together this recipe. It's a quick and easy way to dress up plain boxed stuffing. Ingredients:
1 cup stuffing |
5 slices bacon, diced |
2 scallions, sliced thinly |
2 carrots, sliced thinly |
1/4 - 1/2 cup water |
Directions:
1. In a medium saucepan, cook bacon over medium heat until crisp. Do not drain. Add onions and carrots and stir fry until onions are soft, about 3-5 minutes. 2. Remove pan from heat. Add stuffing and mix well. Add 1/4 cup water and mix until well combined. If stuffing is dry, add more water until sufficiently moist. We like our stuffing a little dry so that it's not mushy, but it's totally up to you. |
