A tasty alternative to plain boiled rice. Ingredients:
12 ounces long grain rice |
1/2 quart vegetable broth |
7/8 cup tomato sauce |
1 teaspoon ground cumin |
1 teaspoon chili powder |
1 ounce flat leaf parsley, chopped (optional) |
Directions:
1. Place the rice in a pan with the broth and tomato sauce. Bring to the boil, cover and simmer for 10-12 minutes. 2. Take off the heat, stir in the cumin and chili powder, then cover and rest for 5 minutes. 3. Fluff with a fork and serve scattered with the parsley if using. |
