Revised from McCormick *A family holiday favorite - even Erick and Calista love it! 14 - 1/2 cup servings Ingredients:
8 ounces (1 can) pineapple, canned |
6 cups sweet potatoes, mashed |
1/4 cup splenda sugar |
2 tbsp country crock spreadable butter |
1 tbsp vanilla |
1 tsp cinnamon |
1/4 cup splenda brown sugar blend |
1/4 cup country crock spreadable butter |
1/2 tsp cinnamon |
Directions:
1. Drain pineapple, reserving 3/4 cup juice. Combine juice with next 5 ingredients; mix well. Pour mixture into greased 8x8 inch or 2 quart baking dish. Place pineapple on top. 2. In a small saucepan combine brown sugar, butter, and cinnamon. Cook over medium heat just until sugar dissolves. Pour over potato and pineapple mixture. 3. Bake in 350 degree oven for 35-40 minutes. |
