Spiced Spinach With Yogurt |

From Wine Lover's Healthy Weight-Loss Plan Ingredients:
1 teaspoon extra virgin olive oil |
2 -3 garlic cloves, crushed |
2 teaspoons grated ginger |
1 teaspoon ground coriander |
1 teaspoon ground cumin |
1 lb spinach, washed and trimmed |
1/2 cup yogurt |
1/8 teaspoon nutmeg |
sea salt |
fresh ground black pepper |
2 tablespoons walnuts or 2 tablespoons pine nuts, toasted and chopped |
Directions:
1. Heat oil in large nonstick saucepan over medium-high heat. Add garlic and ginger. Cook 1 minutes. Stir in coriander and cumin. 2. Add spinach and cook until just wilted, about 2-3 minutes Remove from heat. 3. Stir in yogurt and nutmeg. Season with salt and pepper. Serve. |
