Just a little appetizer to start the party off. Prepared in the microwave, to free up some of the stove space. Ingredients:
2 lbs. large shrimp (21-30 count) peeled and deveined |
1/4 cup butter |
2 tbsp. flour |
2 tsp. snipped fresh parsley |
1/2 tsp. ground coriander |
1/2 tsp. ground cumin |
1/4 tsp. salt |
1/4 tsp. pepper |
1/4 tsp. ground nutmeg |
1/4 tsp. ground cloves |
1 1/4 cups milk |
Directions:
1. Place shrimp in a 1 1/2-qt. casserole. Microwave, covered, at HIGH 5-8 minutes, or until shrimp just turn pink, stirring 2 or 3 times. Do not overcook. Set aside. 2. Place butter in a 4 cup measure. Microwave at HIGH until melted. Blend in flour and all the spices. Blend in milk with a wire whisk. Microwave at HIGH 3-6 minutes, or until thick and bubbly, stirring with whisk 2 or3 times. Drain shrimp; stir in sauce. Serve with cocktail picks. |
