Ingredients:
2/3 cup uncooked long grain rice |
1 1/4 cups water |
3/4 cup chopped onion |
1 1/2 teaspoons olive oil |
1 1/2 teaspoons honey |
3/4 cup reduced-sodium chicken broth |
1/4 cup golden raisin |
1 teaspoon curry powder |
1/4 teaspoon salt |
1/4 teaspoon ground cumin |
1/4 teaspoon ground cinnamon |
1/4 cup chopped red bell pepper |
Directions:
1. Bring rice and water to a boil. Reduce heat and simmer until water is absorbed. 2. Saute onion for 1 minute. Add honey and cook 2 minutes longer. Stir in the broth raisins, curry, salt, cumin, and cinnamon. Bring to a boil. Reduce heat; simmer, uncovered, 5 minutes. Stir in red bell pepper and rice until well blended and rice is heated through. |
