Spiced Red Cabbage

This was part of one of her favorite meals that her mother made. Try serving as a side to Beef Rouladen (#22507).
Ingredients:
1/2 medium head red cabbage
1 tablespoon vegetable oil
1 medium onion
1 medium tart apple
3 tablespoons red wine vinegar
1 tablespoon sugar
1 bay leaf
1 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground cloves
Directions:
1. Bring a large pot of salted water to boil.
2. Meanwhile, dice cabbage.
3. Boil cabbage for 1 minute, drain and return to pot.
4. Chop onion and slice apple.
5. Add with remaining ingredients to the pot of cabbage.
6. Cover and simmer until cabbage is tender, about 1 hour.
7. Remove bay leaf and serve.
