Ingredients:
8 cups sugar
8 cups water
grated rind of 4 lemons
2 teaspoons red food coloring
32 whole cloves
12 small apples, cored and peeled
Directions:
1. Combine sugar and water in a large Dutch oven. Cook over medium heat until sugar dissolves; add lemon rind, food coloring, and cloves. Cook an additional minute. Strain mixture; discard rind and cloves. Add apples; cook, uncovered, 30 minutes or until apples are tender and translucent red in color. Serve hot or chilled with cooking syrup.
