Very high but good carb and high in protein. Remember to add garbanzo beans since it can't be included in recipe! Ingredients:
1/2 tbsp olive oil |
1 small onion, chopped |
1 clove garlic, minced |
3 cups quinoa, cooked |
1 1/2 tsp curry powder |
1/2 tsp salt |
1/2 tsp black pepper |
1/2 tsp cumin |
1/4 tsp cinnamon |
1 1/2 cups chicken stock |
1/2 cup toasted pine nuts |
Directions:
1. Saute onion and garlic in olive oil 2. add quinoa 3. add spices 4. add garbanzo beans 5. add chicken stock 6. cook for 20 minutes 7. add toasted pine nuts |
