Muffins are so fast to make so why not give this spiced pumpkin one a try. Ingredients:
2 cups all-purpose flour |
2/3 cup firmly packed brown sugar |
1/3 cup sugar |
1 tablespoon baking powder |
1 teaspoon salt |
1 teaspoon ground cinnamon |
1/4 teaspoon baking soda |
1/4 teaspoon ground ginger |
1/2 cup butter, melted |
1/2 cup cooked pumpkin |
1/3 cup buttermilk |
2 eggs, slightly beaten |
Directions:
1. Heat oven to 400 degrees. 2. Stir together flour, sugars, baking powder, salt, cinnamon, baking soda and ginger in large bowl. 3. Stir together all remaining ingredients in medium bowl; stir into flour mixture just until moistened. 4. Spoon into paper-lined or greased muffin pan. 5. Bake for 15 to 20 minutes or until lightly browned. 6. Cool 5 minutes; remove from pan. |
