2-1/4 cups granulated sugar |
3/4 cup vegetable shortening 2 large eggs beaten |
2 teaspoons pure vanilla |
16 ounces cooked pumpkin |
1-1/4 teaspoon baking soda 2 cups raisins 1 cup chopped walnuts |
4 cups sifted flour |
1/2 teaspoon ground ginger |
4 teaspoons baking powder |
1/2 teaspoon ground cinnamon |
1/2 teaspoon allspice |
1/4 teaspoon ground cardamom |
1/4 teaspoon ground cloves |
1 teaspoon salt |
Directions:
1. Preheat oven to 375. 2. Cream sugar and shortening in medium bowl then add eggs, vanilla, pumpkin and baking soda. Blend again to thoroughly combine all ingredients. 3. Add raisins and walnuts then stir to combine. 4. In large bowl sift flour, baking powder, ginger, cinnamon, allspice, cardamom, cloves and salt. 5. Pour pumpkin mixture into dry ingredients and stir with wooden spoon until dough is blended. Drop by teaspoonful onto ungreased cookie sheet and bake 10 minutes. Remove from cookie sheet to wire rack to cool. |
