Spiced Prawn and New Potatoes Recipe |

Got this from delicious magazine, and have changed a few things to suit what I had in, and how many I was serving. :) Ingredients:
300 g new potatoes, quartered |
1 tablespoon olive oil |
1 red onion, finely chopped |
1 teaspoon sambal oelek |
1 pinch cayenne pepper |
50 ml white wine |
400 g cherry tomatoes, halved |
225 g king prawns, raw and peeled |
2 tablespoons fresh coriander, chopped |
Directions:
1. 1. Cook the potatoes in a pan of boiling salted water for 5 minutes, then drain. Meanwhile, heat the oil in a frying pan and gently fry the onions and spices for 5 minutes. 2. 2. Add the wine and reduce by half. Add the tomatoes and potatoes, season and simmer for 10 minutes. 3. 3. Add the prawns and bubble for 3-4 minutes until the prawns are cooked. Stir in the coriander and serve. |
