Ingredients:
1 1/2 pound(s) yukon gold potatoes |
2 tablespoon(s) vegetable oil |
1 whole(s) onion |
1/2 teaspoon(s) ground cumin |
1/2 teaspoon(s) red pepper flakes |
6 stalk(s) cilantro |
Directions:
1. Set a steamer basket with 2 inches water on stove. Add potatoes, cover and steam until tender, approximately 12 minutes. Transfer to paper towel lined plate. In large skillet, heat oil over high heat, add onion - salt & pepper. Cook until brown, add cumin, red pepper flakes and potatoes. Stir frequently, until light golden. Plate with cilantro. |
