Spiced Pineapple Cocktail |

Cool, tropical, refreshing...YUMM! The spiced part is chile powder on the rim of the glass. Made this for a Cinco de Mayo birthday party, they were gone in a hurry I had to make another batch just so I could get one. Courtesy of Everyday Food Magazine May 2011. Note: I used honey in place of agave nectar and canned pineapple instead of fresh/frozen and we added more tequila...much more. Ingredients:
1/4 cup fresh lime juice (from about 3 limes) |
3 tablespoons agave nectar (or honey) |
1 cup pineapple juice |
2 cups pineapple (fresh or frozen) |
1/4 cup triple sec |
1/3 cup tequila |
2 cups ice |
1 1/2 teaspoons chili powder |
1 1/2 teaspoons sugar |
1/2 teaspoon coarse salt |
Directions:
1. Stir together juices, triple sec and tequila in a blender add ice. Blend until smooth and frothy. 2. On a saucer combine ingredients for the rim of the glass. Wet rim with a lime wedge and dip glass in mix to coat rim. 3. Pour and enjoy! |
