Ingredients:
4 red pears, halved, cored and sliced |
juice of 1 lemon |
1/2 cup apple cider |
3 tablespoons honey |
grated peel of 1 lemon |
4 cloves |
1/2 cinnamon stick |
6 black peppercorns |
1 cup heavy cream |
1/8 cup confectioners' sugar |
1/8 teaspoon pure vanilla extract |
shortbread cookies, optional |
Directions:
1. In a large bowl, toss pears in lemon juice. 2. Combine apple cider, honey, lemon peel, cloves, cinnamon stick and peppercorns in a large skillet. Add pears and bring to a simmer over medium heat. Cover and cook until pears just begin to soften, about 4 minutes. Using a slotted spoon, transfer pears to a dish; set aside. 3. Increase heat to medium-high and reduce sauce until it's slightly syrupy, 2 to 3 minutes. Remove from heat and strain; discard spices. 4. Whip heavy cream with sugar and vanilla extract. Serve with pear slices and, if desired, cookies. |
