If you don't like spices, then leave them out but they really are a nice enhancement to the peaches. Ingredients:
4 1/2 cups all-purpose flour |
1 teaspoon salt |
4 1/2 teaspoons baking powder |
2 cups brown sugar |
1/2 teaspoon allspice |
1/2 teaspoon nutmeg |
1 teaspoon cinnamon |
2 eggs |
3/4 cup vegetable oil |
1 1/4 cups milk |
4 peaches, diced |
granulated sugar |
Directions:
1. Combine flour, salt, baking powder,brown sugar, allspice, nutmeg, and cinnamon in a large bowl. 2. Stir in eggs, vegetable oil and milk, then gentley stir in fruit. 3. Grease 16 muffin cups, and heap batter into cups; they'll be very full. 4. Sprinkle with granulated sugar. 5. Bake at 400 degrees for 25-30 minutes, or until toothpick inserted in centre comes out clean. |
