Chicken breasts are cooked in a skillet and are then topped with a warm, homemade orange sauce. It can be prepared in just 14 minutes! Ingredients:
4 (4-ounce) skinned, boned chicken breast halves |
1/4 teaspoon salt |
1/4 teaspoon pepper |
cooking spray |
1/2 cup orange sections in light syrup, drained and coarsely chopped |
1/4 cup orange juice |
3 tablespoons low-sugar orange marmalade |
1/4 teaspoon ground cinnamon |
Directions:
1. Place chicken between 2 sheets of heavy-duty plastic wrap, and flatten to 1/4-inch thickness, using a meat mallet or rolling pin. Sprinkle with salt and pepper. 2. Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add chicken; cook 3 to 4 minutes or until lightly browned. Turn chicken, reduce heat to medium-low, and cook 2 to 3 additional minutes or until done. 3. Add orange sections and remaining ingredients to skillet. Cook 2 to 3 minutes or until orange mixture is thoroughly heated. To serve, spoon orange mixture over chicken. |
