Ingredients:
1/2 cup chopped fresh cilantro |
1/4 cup chopped fresh mint |
2 teaspoons ground cumin |
2 teaspoons fresh lime juice |
2 teaspoons vegetable oil |
1/2 teaspoon ground red pepper |
1/4 teaspoon salt |
3 garlic cloves, minced |
4 (4-ounce) skinned, boned chicken breast halves |
cooking spray |
Directions:
1. Place the first 8 ingredients in a food processor, and pulse 2 to 3 times or until combined. Rub chicken with marinade, and place in a large zip-top plastic bag. Seal, and marinate in refrigerator at least 15 minutes. 2. Prepare grill or broiler. 3. Remove chicken from bag; discard marinade. Place chicken on grill rack or broiler pan coated with cooking spray, and cook 6 minutes on each side or until done. |
