Spiced Maple Pecan Pumpkin Bread W/Cream Cheese Frosting |

This is a healthier alternative to the traditional pumpkin bread recipe that I had growing up... delicious!!! Ingredients:
1/2 cup organic butter, softened |
1 cup pure organic maple syrup |
2 large organic eggs |
1 1/4 cups canned pumpkin |
1 teaspoon pure vanilla extract |
1 1/2 cups whole wheat pastry flour |
1 teaspoon baking soda |
1 1/2 teaspoons pumpkin pie spice |
1/2 teaspoon cinnamon |
1/4 teaspoon sea salt |
1/2 cup chopped pecans |
2 (8 ounce) packages organic cream cheese |
1 teaspoon pure vanilla extract |
4 tablespoons organic butter, softened |
1/2 cup agave nectar |
Directions:
1. For the bread: Heat oven to 350 degrees. Generously grease a loaf pan. 2. Cream the butter, maple syrup, eggs, pumpkin, and vanilla in a large bowl. Usa a separate, large bowl and a wire whisk to mix the flour, baking soda, pumpkin pie spice, cinnamon, and salt. Stir in the pecans. 3. Fold the wet ingredients into the dry ingredients until barely incorporated - do not over mix. Spoon batter into greased loaf pan. Bake until a toothpick inserted into center of the loaf comes out clean, about 1 hour. Cool the bread for 15-20 minutes on a wire rack, then remove the loaf from the pan to cool the rest of the way. 4. For the frosting: Cream all of the ingredients together well. Instead of frosting the entire loaf, I like to cut slices and then frost individual slices. |
