From Prevention. Ingredients:
1 cup lentils, rinsed |
1 (28 ounce) can stewed tomatoes, undrained |
2 medium potatoes, diced |
2 medium carrots, sliced |
1 medium onion, chopped |
1 celery rib, sliced |
3 garlic cloves, minced |
3 bay leaves |
1 teaspoon black pepper, freshly ground |
3 tablespoons curry powder |
1 teaspoon ground cumin |
1 teaspoon ground coriander |
4 cups vegetable broth |
Directions:
1. Combine all ingredients in slow cooker. 2. Cover. Cook on low 8 to 10 hours or on high 4 to 5 hours until lentils are tender. 3. Remove bay leaves before serving. |
