Spiced lamb with couscous |

A tasty Morroccan-influenced dish Ingredients:
1 cup couscous |
1 1/4 cups boiling chicken stock |
2 tablespoons oil |
2 onions, sliced |
1 tablespoon thyme leaves |
1 tablespoon ground cumin |
1 teaspoon chili powder |
1 tablespoon paprika |
500 g lamb fillets |
Directions:
1. For couscous-. 2. Place couscous and boiling stock in a bowl. 3. Cover with plastic wrap. 4. Let stand for 5 minutes, or until all liquid is absorbed. 5. Heat oil in a frying pan. 6. Add onion and thyme, and cook until onion is well browned. 7. For lamb-. 8. Combine cumin, chilli and paprika, and toss with the lamb fillets, to coat. 9. Heat another pan and cook lamb to own prference. 10. Place couscous in pan with onion, and toss. 11. Slice the lamb and serve on top of the couscous. |
