Spiced Honey Lemon Muffins |

A delightful and delicious muffin. Betty Crocker's Best Of Baking. Ingredients:
3/4 cup milk |
1/3 cup vegetable oil |
1/4 cup honey |
2 tsp. grated lemon peel |
1 egg |
2 cups all-purpose flour |
2 1/1 tsp. baking powder |
1/2 tsp. salt |
1/2 tsp. ground cinnamon |
1/4 tsp. ground allspice |
honey-lemon glaze |
2 tbs. honey |
1/4 tsp. grated lemon peel |
2 tsp. lemon juice |
Directions:
1. Heat oven to 400 degrees. 2. Grease bottoms only of 8 medium muffin cups 2 1/2 X 1 1/4-inches. 3. Beat milk, oil, honey, lemon peel and egg in a large bowl. 4. Stir in remaining ingredients except Honey-Lemon Glaze just until flour is moistened. (Do not over-mix). 5. Divide batter evenly among muffin cups (cups will be about 3/4 full). 6. Bake 20 to 22 minutes or until golden brown. 7. Immediately remove from pan. 8. Brush Honey-Lemon Glaze over warm muffins. (Some of the glaze will drip. Place muffins on a serving plate, cookie sheet or waxed paper.) 9. To make Glaze: 10. Mix all ingredients until well blended. |
