Spiced Honey Almond Slice Cake Thing |

Based on a recipe i found in the Delights of Russian Cuisine . This is a fat-free, cane sugar-free cake/slice that is great for tea/coffee breaks. Has a chewey, gingerbread-like texture and keeps well for a few days. Ingredients:
1 egg |
1/2 cup honey |
1/2 tsp bi-carb soda |
1/2 tsp allspice (or to taste) |
2 cups flour, sifted |
about 12 blanched almonds |
1 tsp honey, extra, mixed with 1 tsp boiling water |
Directions:
1. Preheat oven to 180C (350F). Line a brownie tin. 2. In a large bowl, beat the egg. 3. Warm the honey in the microwave for 30 seconds or so, to make it runny. 4. Add honey, bi-carb soda and allspice to the egg. Mix well. 5. Gradually fold-in flour. The mixture will be a little crumbly/stiff. 6. Transfer mixture to prepared tin, Firm down the top a little. 7. Press the blanched almonds into the top of the batter decorativley. 8. Bake for 15 minutes, remove from oven and brush top with honey/water mixture. 9. Return to the oven for another 5 minutes. 10. Allow to cool and slice into squares. |
