Spiced Ham and Lentil Soup |

I was just playing with soup and it turned out fantastic. I wasn't able to keep enough around to freeze any, so next time I'm doubling the recipe. Ingredients:
3 cups water |
1 1/2 cups beef broth |
1 cup lentils |
1 cup ham, diced |
1/2 red onion, chopped |
2 roasted peppers, diced (or chili peppers) |
1 carrot, sliced |
2 tablespoons molasses |
1/2 cup mushroom, sliced |
2 whole nutmegs (cracked) |
2 tablespoons garlic, minced |
1 bay leaf |
Directions:
1. Mix all ingredients. Bring to a boil. 2. Lower heat to simmer and let cook for about 2 hours, or until lentils are soft. |
