Spiced Greek Olives

A nice look to your table and very tasty...kind of a wake up your taste buds dish.
Ingredients:
1/4 cup extra virgin olive oil
3 sprigs each fresh rosemary and thyme
2 garlic cloves, thinly sliced
1/2 tsp. whole peppercorns
grated peel and juice of 1/2 lemon
1 (7 oz.) jar spanish olives, drained
Directions:
1. In saucepan, combine olive oil, herb sprigs, garlic and peppercorns.
2. Set over low heat just until seasonings become fragrant.
3. Stir in lemon juice and peel.
4. Place olives in shallow dish.
5. Pour warm oil and seasonings over olives and toss gently.
6. Cover and let stand at least 2 hours before serving.
7. Store in refrigerator up to two weeks in a covered jar (shake occasionally).
